Saute' Onion with Balsamic Vinegar and Marsala on Pastry




Ingredients:

1. 6-8 small size onions and slice it (you can mix the different types of onion)

2. 10-15 button mushrooms and cut it forth

3. Baby Arugula

4. Blue Cheese

5. Pastry Puff


Flavor:

1. Garlic

2. 1 tablespoon of Rosemary

3. 1 tablespoon of Balsamic vinegar

4. 1 tablespoon Marsala wine

5. 1teaspoon of Soy sauce (its ok you don't have it, but it really make a different.)

6. 1 tablespoon of light brown sugar

7. Salt and pepper

8. Oliver oil and 1 tablespoon of unsalted butter

9. 1 Egg

Medium heat, Oliver oil, sauté onion, mushroom, and add in the salt right after (salt will help to bring out the water from onion and mushroom, otherwise it will take longer to cook) about 20 -25minutes when it turn transparent and light brown add in garlic, rosemary, brown sugar, soy sauce and adjust the salt and pepper. Keep stir the onion until the color change to dark brown then turn off the heat add the balsamic vinegar and marsala wine(vinegar and wine lost the flavor during the long time cooking by adding in the end you can save lot of it). Finish with 1 tablespoon of butter. Let it cool down.

Double the pastry dough on the parchment paper and roll up the side as border, use fork dot the bottom and brush egg wash. 400 degree bakes for 10 minutes then take it out spray the onion mixture and blue cheese bake another 10 minutes. Serve with baby arugula while it warm or room temperature. (the onion mixture are good with toasty bread, simply assemble baby arugula, onion mixture on the olive toasty bread then sprinkle the blue cheese will make a nice presentation.)
